Midnight Dabeli Recipe

Ingredients

1 pk Burger Buns quantity of 8

5 medium sized potatoes

¼ tsp Salt

5 tbsp Dabeli Masala

1 Pomegranate, seeds taken out

2 tbsp Ghee

¼ cup coriander chopped

2 tbsp Ghee

1/3 cup coriander chutney

1/3 cup apple butter/amli chutney

1/3 cup sev

Wash the potatoes and put them in the pressure cooker with salt and water just till it
covers the potatoes. Pressure cook potatoes for 4 whistles to get them nice and soft.
Once the air has come out of the cooker, open and peel the potatoes and use a masher to
mash them finely.
Keep that aside to cool and now take the apple butter/amli chutney, add 4 tbsp of it to the
dabeli masala and mix into a thick paste.
Heat a pan on medium heat and add 2 tbsp ghee. Wait till it heats up and then add the
dabeli masala mixture we just made. Stir constantly and wait till it turns aromatic, around
1-2 minutes. Add the mashed potatoes and mix until incorporated. As soon as the potatoes
mix in with the dabeli masala, turn off the gas.
Keep the potato mixture aside to cool and let’s turn to the assembly. Get another pan on
the stove to toast our dabelis once they are assembled. Keep on low to medium heat.
Take the potato mixture out into a container and smooth out. On top add pomegranate
seeds, sev, coriander.
Take a burger bun and open both sides. Add 1 tsp of coriander chutney on one side of bun
and spread. On the other side of bun take 1 tsp of apple butter/amli chutney and spread.
For both chutney applications, you can always add more if you like.
Now take a big spoonful of potato mixture and spread on top of the bottom burger bun.
Add more sev, pomegranate seeds, and coriander if you like. Put the top burger bun and
add some ghee to the pan and lightly toast the dabeli for 1-2 minutes on each side, toast
longer as per your desire.

Serve with chutney on the side or just enjoy as is!
